This use of stale bread in making a sauce is truly medieval. I love bread sauce, hot with white game, cold in sandwiches. There are many ways to make it—some like the onion cut up, some like it cooked whole and then mashed up before serving—I make mine in a double boiler. You can make it in advance, freeze it, or keep it in the warming drawer but this is what I do.
