Stock makes all the difference to game cookery. I tend to make it as and when I need it, but it is good to have a blitz now and again. Make a whole lot and reduce down for storage, and then rehydrate it with water when you want to use it. A pressure cooker is wonderful for making stock and will do in an hour or less what takes 5 hours in a pot. If you have an Aga or such, make it slowly in the bottom oven.
