Some people serve chips with game—tut tut. Game fries are easy to make and even the best of potato chips don’t measure up. For perfect game fries you must use floury potatoes, preferably bought from a farm shop so they haven’t been irradiated and chilled like the supermarket variety, and when you have sliced them very thinly using a mandoline or a food processor or a very sharp knife, you must wash them well in running cold water to remove the starch.
