This super simple recipe first made its debut in the original Cooking Academy dim sum class. To my surprise it quickly became the star of the show; no wonder really, as it’s quick to prepare and cook yet is an absolute flavour bomb! Don’t take my word for it, try it for yourself and see what you think.
Place the soy sauce, fresh coriander, garlic, jaggery, and pepper or chilli into a bowl and mix well, ensuring the jaggery has dissolved by rubbing it with your fingers.
Add the mushrooms to the bowl and gently massage the mixture into them. Set aside for 2-3 minutes.
