Dagga refers to Gaza’s famous hot tomato salad, but it is also the general term for all manner of “pounded” dressings or sauces: “pounded” is the literal translation of the word. This one serves as a dressing or stuffing for fish of all kinds.

Ingredients

  • 6 cloves garlic
  • ½ teaspoon salt
  • 1 green hot chile peppe

Method

In a mortar and pestle, combine the garlic and salt and mash well. If you do not have a mortar and pestle, use the pulse function on a food processor. Add the chile peppers and pound (or pulse) them until well crushed. Stir in the dill, coriander, and olive oil and mix.
