Look for freekah in your local Middle Eastern market. It comes in two varieties: whole and cracked. This recipe requires the latter. Make sure to pick it over for any small stones.
If you don’t have time to make Maraqa, use packaged broth and add the spices listed in the broth recipe (tied in a piece of gauze or cheesecloth for easy disposal) to this soup while it cooks.
