Versions of this popular eggplant spread appear all over the Levant. Better known in the West as baba ghanooj, it is marvelously rich and smoky. Imtabbal literally means “marinated” or “dressed.” This dish differs from most baba ghanooj in that it includes yogurt. The Gazan version is also, characteristically, a bit spicier than others.
