This very thin bread is baked on a saj, a metallic dome constructed of sheet metal or cast iron, heated over coals or a gas burner. The curved surface helps keep the bread stretched out for uniform thinness.
A carbon-steel wok flipped upside down on a gas range works well for this (but don’t put your wok upside down on a burner if it has any kind of anti-stick coating!). If you don’t have any kind of curved surface, this bread can also be made on an ordinary griddle or in a s
