We have found that using a good-quality frozen chopped spinach works just as well as fresh for these pies, and will save you time and much squeezing by hand. Set the frozen spinach in a colander to thaw to room temperature, then proceed with the recipe as written. The intrepid may wish to use a variety of edible wild greens, finely chopped, blanched, and drained.
