This is one of several dishes that make use of the pulp left over after hollowing out a squash for Mahshi. Finely chopped summer squash of any variety works just as well. You may also prepare this dish with seasoned ground beef or with the squash alone. Simply omit the eggs, in either case.

  • 2 cloves garlic
  • 1 teaspoon salt
  • 1–2 hot green chile pep

Crush the garlic and the peppers with ½ teaspoon of salt in a mortar and pestle. Set aside.

Next, sauté the onion in 2 tablespoons of olive oil on medium heat until golden. Add the squash and cook
