Vinegar and basil round off this summertime favorite. Use good, flavorful ripe tomatoes.
In a mortar and pestle, crush the garlic, chile peppers, and salt together. Fry garlic-chile mixture in olive oil for about 30 seconds on medium-high heat until the garlic is fragrant.
Add the tomato slices and fry, uncovered, for 2 minutes without stir ring. Lower the heat and cover the pan. Let simmer for about 10 minutes. Uncover, then drizzle with vinegar. Remove from heat and sprin
