This jewel of a fast food is beloved to all—rich and poor, urban and rural— throughout much of the Middle East. Gazans, never satisfied with the mild, add hot green chile peppers and a generous bouquet of green herbs: dill, cilantro, and parsley. The resulting bite-size marvels have a bright green interior bursting with flavor.
This particular recipe is in memory of
