Khobeiza, or common mallow, grows wild all over Palestine (and in many other countries, too). Any mildly flavored green (chard, beet leaves, and so on) may be substituted, though the effect will not be quite the same. For a quick preparation, ⅓ cup instant couscous or small pasta can be used instead of the dumplings, and store-bought broth instead of the Maraqa.
