Gaza has a small Christian population. During Lent, they enjoy this vegetarian stew, traditionally prepared in hand-made, unglazed clay bowls and slow-cooked in a large communal stone oven. The following mixture of vegetables works nicely, though almost any vegetables may be substituted; use what you have on hand. The important thing is the long slow-cooking, over real coals if at all possible.
