This recipe came our way in the course of an energetic and chaotic conversation on the subject of baked chicken with the women at the Olive Roots Cooperative in Zeitoun. There were as many recipes as there were cooks. And they’re all fantastic!

Method

Preheat your oven to 375°F (190°C).

In a large bowl, wash your chicken with water and a fistful of flour, then rub it with a spent lemon rind or a little vinegar and some coarse salt
