A lemony delicacy beloved of Yaffa winters. Like the renowned rice dish Sayadiyya, it is typically made with the buttery, sweet tail meat of the guitarfish or salfooh, a type of ray with an elongated body and a flattened head. Substitute any other meaty, sweet flatfish, such as skate. In a pinch, fish like haddock, grouper, ocean perch, or orange roughy would work.
