This is a perfect marinade for simple grilled or fried fish. It is also used as a first step in several of the more elaborate recipes in this chapter.


  • 5 cloves garlic
  • ½ teaspoon salt
  • 2 green chile peppers</


In a mortar and pestle, mash the garlic with the salt. Add the chiles and crush well. Stir in the remaining ingredients and mix well. Massage this marinade into and on top of the fish to be cooked and refrigerate it for 15 to 30 minutes before grilling, frying, or baking.
