Carob Juice

Nothing quenches thirst quite like an ice-cold cup of kharoub in the sweltering Palestinian summer. Colorful kharoub vendors donning red fezzes (tarboush in Arabic) and carrying great ornate pouring vessels decorated with carnations can be seen wandering through public marketplaces. Dried kharoub can be found in natural food stores or online. Don’t be tempted to substitute carob powder: As one of the women we interviewed, Um Rami, discovered, the
