We had this bright, delicious herbal infusion at the Gaza Safe Agriculture Project organic farm, where the herbs were snipped directly from bushes buzzing with beneficial insects. Many families have these herbs growing in their courtyards and gardens, for both their sweet smell and their medicinal properties. The antispasmodic and antiseptic properties of zaatar make it a well-used remedy for coughs and colds.
