I’m always looking for a little something savory in my cocktails, so I like to swap the sweet orange liqueur called for in many margarita recipes with an herbaceous syrup made with green peppers and cilantro. Mixed with soda water and a good squeeze of lime, the syrup also makes a great nonalcoholic drink.

Ingredients

  • Lime wedges, to coat rims and garnish
  • Guajillo Chile Salt or Tajín, spread out on a small plate

Method

Moisten the rims of two cocktail glasses with a lime wedge. Dip the rims into the guajillo chile salt to coat. Fill each glass halfway with ice.

In a cocktail shaker or glass, stir together the mezcal, cilantro-jalapeño simple syrup, and lime juice. Pour the mixture into the prepared glasses and garnish each with a lime wedge and a few sprigs of cilantro.
