The paloma is an undersung cocktail of Mexico. Grapefruit and agave spirits taste so great together, I had to give you two drinks with the combination in this chapter. In bars, palomas are often made quickly with a grapefruit soda, but to get the right succulence, you need fresh-squeezed juice, like my friend Dano Sanchez uses at his idyllic Baja beach bar, Barracuda Cantina. Try his trick of garnishing with rosemary—its piney fragrance accents the drink so nicely.
