At the organic fruit stand in Todos Santos, there were gorgeous jars of local honey with the comb inside. Our salesman wanted to make sure we ate the comb with a mozzarella-like panela cheese, but instead, I found an almost mascarpone-rich goat cheese. I knew it would taste great with the honeycomb, especially with charred tortillas and a smoky pinch of chipotle powder. I’ve tried again back home with my favorite local fresh chèvre, and it’s delicious, too.
