At roadside chicken stands, you’re likely to get your chicken served with charred onions, cooked into submission until they are soft, steamy, and sweet inside. So simple and so good. I like to cook onions directly on the coals—it’s earthy and elemental. This presentation dresses them up a bit, with a voluptuous, gently spiced jalapeño crema.
