Suze is a funky, bitter aperitif: It’s got a distinct earthiness that really rounds out a drink, with a touch of sweetness and citrus elements that soften it to keep it from feeling like homework. I like it mixed with the gentler Lillet in a riff on the negroni, and of course, that calls for a nice juicy orange wedge, as well.
Fill a rocks glass halfway with ice. In a cocktail shaker filled with ice, combine the Suze, gin, and Lillet. Shake until very cold and strain into the ready glass. Serve with a fat orange wedge.
