Beige as beige can be, tonnato sauce might be a little bit dowdy to look at, but I’ve loved it for a long time. It’s full of complex, long-playing flavors and is super simple to make. When I was last in London, we had a spectacular dish of tomatoes with tonnato at Luca, a favorite Italian-style restaurant of mine. I loved the look of the showy red tomatoes playing peekaboo with the plain sauce. The sharp little garnishes help balance it all out.
