Golden chanterelles have a somewhat apricot aroma and appear in Seattle markets in midsummer, sweet and small, as shown here, but as fall begins, they become larger and more abundant. The price plummets, and I can really pile them up in my cooking. They are so good with a dollop of Seaweed Butter, combined with a golden soft heap of scrambled eggs.
