  1. Trim the woody broccoli stem bottoms and discard. Cut off the florets from the tops of the stems and set aside. Cut the stems into Ā½-inch lengths. Place the stems in an even layer in the steamer over vigorously boiling salted water; cover tightly Steam for 3 minutes. Add the florets and steam until everything is crisp-tender but still bright green, about 5 minutes longer. Drain; rinse under cold running water to stop the cooking and set the color. Drain well; place on paper towels to dry.
