Follow the directions for yam balls, but omit the tomatoes, and reduce the egg to one. When the yam mixture is ready, dust your hands with flour and roll the yam mixture out into a cylinder. Using a sharp, moistened knife, cut the cylinder into thick slices (or you can simply form patties by hand). Brush the slices with some egg white, dust them with flour, and fry each side for several minutes
