Snacks in Ghana are known as “small chop.” A simple popular snack is roasted corn and fresh crunchy coconut pieces. This is a great snack on a hot summer afternoon or evening, especially when accompanied by an ice-cold beverage of your choice, like Ginger Beer, Hibiscus Iced Tea (Bissap), tamarind drink, or beer.


  • 1 coconut
  • 1 or 2 ears of fresh corn per person



  1. Crack open and prepare the fresh coconut as described. Cut or break the coconut meat into bite-size strips or chunks.
  2. Shuck the corn and bring a pot of salted water to a boil. Add the corn cobs and cook them just until tender, 5 to 10 minutes. Alternatively, you can grill the corn over an open fire, or cook them in a microwave oven (about 6 minutes for 1 ear on high heat, turning once).
  3. Serve pieces of corn on the cob and coconut together.
