For an optional spicy coating, mix together 1½ teaspoons ground fresh ginger, 2 tablespoons tomato paste, 2 cloves crushed garlic, ½ teaspoon dried ground red pepper, and 1 medium grated onion and rub the mixture on the chicken skin before roasting.
