You can make jollof rice without the meat to be served as a side dish. Before sautéing the seasonings, put the onions, garlic, and ginger in a blender and grind to make a paste. Then follow the directions for making the Chicken Jollof Rice, sautéing the paste first for about 5 minutes, stirring, then adding the seasonings and tomatoes, etc.
