Method

Rinse a half pound of sprats in water, pound in a mortar, and add ½ lb melted, pure Finnish butter. Beat until white and pass through a sieve. Serve with capon, fried beefsteak (tonkij file), etc. This may be stored in a cold place for 2–3 months.
