Ingredients

  • lb butter
  • 5 eggs
  • ½ glass sugar in all
  • ¾ glass flour
  • 1 full teaspoon cinnamon
  • [1 raw egg]

Method

Mix 5 hard-boiled egg yolks, lb fresh butter, ¼ glass sugar, 1 raw egg, ¾ glass flour, and finely ground cinnamon. Beat everything together, first with a wooden spoon and then with your hands for at least 15 minutes. Form into ringlets, dip them in cinnamon and sugar, and place on a baking sheet dusted with flour. The heat must be very low for baking these cookies. Yields 24 ringlets.

Or make flat, round cakes from the dough, paint with egg, and sprinkle on finely pounded almonds.

*What were called pretzels (krendel’ki) in the first edition have become ringlets (kolechki) in the twentieth. Otherwise the recipes differ only slightly, with the raw egg and the final suggestion for alternative shaping added in the later edition.
