The nutty flavour and satisfying bite of red rice make it ideal for a warm salad and we nearly always sell out of this particular one. On the rare occasions there is some left at the end of the day, there’s a fight over who gets to take it home. Note that olives can be used instead of dates, and the chicken may be replaced with avocado to make the salad meat-free. Make sure you dress the rice while it’s still warm so it absorbs the flavours really well.
