  • 3 tbsp olive oil
  • 300 g new potatoes, sliced 5 mm thick
  • 1 onion, thinly sliced
  • pinch of salt
  • 6 baked puff pastry squares (see method)
  • 120 g Brie cheese, cut into slices
  • freshly ground black pepper
  • small bunch of flat-leaf parsley, leaves picked, to garnish


Heat the oil in a frying pan. Add the potatoes, onion and salt, then cover and cook over a low heat for 15 minutes, stirring occasionally, until completely soft. Leave to cool in the covered pan.

Preheat the oven to 200°C/fan 180°C/gas mark 6.

Spoon the potato mixture on to the baked pastry squares, add slices of Brie to each one and warm in the oven for 5 minutes, until the cheese has melted.

Finish with a twist of black pepper, garnish with chopped parsley and serve.
