We use a very malty, 100 per cent rye bread for this sandwich, which pairs beautifully with creamy Somerset Brie. Look out for delicate leaves of baby basil if you can find it, or just use torn basil leaves.

Ingredients

  • 2 tomatoes, each cut into 5 slices
  • 1 tsp olive oil
  • salt and pepper

Method

Put the tomatoes on a plate, drizzle with the oil and season with salt and pepper.
