To lighten the mayonnaise in the chicken mixture – a recipe originally created for the Queen’s coronation in 1953 – we add some yogurt and sharp chutney. If using a korma paste that has already had its spices cooked out, you can simply stir all the ingredients together. The chicken filling is also delicious served at room temperature on hot white toast.
