A good chicken sandwich needs plenty of mayonnaise spiked with English mustard, capers and cornichons. It’s a great way to use up the remains of a roast chicken, and the mayo also works really well with salami or smoked salmon sarnies.
Place the chicken in a bowl, add the caper mayonnaise and stir well.
Fry the bacon in a frying pan until crisp.
Slice the baps in half, butter them and pile the chicken mixture on one half. Add a handful of radicchio and a rasher of bacon to each. Top with the remaining bap halves and serve.
