This is quite a modern cake for us, but it sums up our view of London. It is a melting pot of flavours and ideas – slightly Italian and a bit Middle Eastern with a G&W twist. Our interest in gluten-free cooking was kicked off when Tonia’s daughter Lily Lois was diagnosed with coeliac disease. Since then, we generally try to avoid having gluten in our cakes, which is easier than you might think. We don’t see why anyone should have to miss out, especially when it comes to cake!
