Peppers become so sweet and beautifully silky soft when you roast them – a world away from their crunchy raw beginnings. We throw these into salads and sandwiches with salty cheese and can’t get enough of them.

Ingredients

  • 2 red peppers
  • 2 yellow peppers
  • 6 tbsp olive oil
