Roasting garlic mellows its pungent flavour, so although a whole bulb is used in this recipe, it is nowhere near as strong as raw garlic. We use this mayo in sandwiches, such as our Portobello Mushrooms on Potato Sourdough, and Garlic & Fennel Slow-roasted Pork Baps.
