For our basic tomato sauce we use very ripe Early Girl tomatoes with lots of olive oil, sea salt, and basil. For me, there is no better tomato sauce, especially when tomatoes are in peak season. In the off season we use canned San Marzano tomatoes. These are generally imported from Italy, but you can also buy San Marzanos grown in California. I find that adding onion, garlic, carrot, or anything else to tomato sauce only gets in the way. The only acceptable addition in our kitchen is a smal
