I wondered whether I should include a recipe for this kitchen staple. But I am convinced that peppers roasted at home, especially over fire, are so simple, satisfying, and superior to those you can buy in jars, it’s worth inclusion for those who haven’t made their own.

Ingredients

  • 4 whole red bell peppers
  • Olive oil

Method

Prepare a hot fire in a charcoal grill (or preheat a gas grill to high, or heat a large cast-iron grill pan over high heat).

Put the bell peppers on the grill (or in the grill pan) and cook, turning them until charred on all sides and starting to soften, about 10 minutes. Transfer the bell peppers to a bowl, cover with a kitchen towel, and set aside to steam. When cool enough to handle,
