We tend to have some version of this dish on our menu all year long; it’s delicious on its own or as a contrasting side to roasted meats or braises. Bury a whole grilled fish in it or use it to set off a slab of pâté. Anytime you want sharp, bitter flavors, either as a contrast for a more fatty dish or simply to refresh your palate, this is the salad you should turn to.
