A study in contrasts, this salad combines sweet, firm Fuyu persimmons; crunchy pomegranate seeds; crisp garlic; and a punchy blue-cheese dressing. Many blue cheeses work well here; we particularly like domestic ones such as Maytag from Iowa and Point Reyes from Northern California. I would suggest steering clear of the drier, more aged blue cheeses for this particular recipe.
