Sausage and broccoli rabe is one of this world’s great marriages and a perfect topping for pizza. For quick-cooking pizzas, look for a young Asiago; it melts better than the harder, aged Asiago. I find the lamb sausage and mint an interesting combination, but you can use pork sausage and oregano for a more traditional pairing, if you prefer.
