We cure a lot of ocean trout, which leaves us with a large amount of belly and collar scraps. Although the kitchen staff consumes most of the precious collars, we often smoke the belly pieces—you will need wood chips for this recipe—and fashion them into rillettes, which are especially decadent (if you can find belly, use it instead of the fillet here).
