Surprisingly, this is one of our most requested recipes. It’s baffling to me because it’s one of the easiest things we make. The key is to get a char on the cauliflower, caramelizing the sugars and bringing out the vegetable’s natural sweetness. That’s easy to do in our 900°F [480°C] wood-fired pizza oven, but I’ve had excellent results making this at home in my 500°F [260°C] gas oven. I like to serve this as a starter with pizza.
