Brown butter and acorn squash are classic fall flavors. In fact, this would be right at home as a side dish for Thanksgiving dinner. This dish makes no apologies for its richness, so don’t skimp on the brown butter. Though you may not normally think of eating the peel of a hard squash, it gets deliciously crisp as it roasts. You won’t want to leave it on the plate. The brown butter is delicious on vegetables and pasta, or as a sauce for fish.
