These substantial mushrooms lend themselves well to grilling and topping with a compound butter as you would a good steak. The tarragon in the butter pairs unexpectedly well with the aromatic quality of the mushrooms. Don’t feel like you have to cook these to death. A medium-cooked mushroom has delicate flavors that dissipate when cooked for too long. It’s a no-brainer to pair these with grilled meats, but they’re also tasty alongside grilled wild king salmon.
